  • 1 cup Whole Wheat pearl couscous, dry
  • 1 medium Carrots coarsely grated
  • 1/2 cup Cilantro chopped
  • 1 tablespoon Extra Virgin Olive Oil

Directions

  1. In a small saucepan, bring 1 1/2 cups water to a boil.
  2. Stir in 1/2 teaspoon salt, whole grain couscous, and carrot; cover pan, and remove from heat. Let stand 5 minutes.
  3. Fluff couscous with a fork. Gently stir in cilantro and oil; season with salt and pepper.
